Getting the kids to eat something can often be tricky as they can be very selective about the kinds of meals they will eat.
However, if you can make it fun then you stand a better chance of getting them to follow a different diet. Should you be looking to cut dairy out of meal times, here are a number of suggestions for how to cook some fun, dairy free meals for your children.
Dairy free macaroni and cheese
The first question you are likely to ask yourself when you see this recipe title is “how do you make macaroni and cheese dairy free?” Indeed, dairy is largely considered to be an integral part of cheese. However, it is possible to make the dish without any real cheese.
What you will need is eight ounces of pasta – while typical recipes contain bow tie or elbow pasta, you could try out this Organic Brown Rice Fusilli. Other ingredients you need are one quarter of a cup of flour, two thirds of a cup of nutritional yeast, half a teaspoon of powdered garlic, one teaspoon of sea salt, four and a half tablespoons of olive oil, half a finely chopped yellow onion, one and three quarter cups of unsweetened soymilk, one third of a cup of finely ground cashews, three tablespoons of tahini paste, half a cup of breadcrumbs and a bit of pepper.
To make the meal, oil up a casserole dish and preheat your oven. Boil some water in a medium-sized saucepan and add the pasta. Leave it there for roughly seven minutes, then drain and set aside. While this is happening, combine the flour, nutritional yeast, powdered garlic and sea salt in a small bowl. Fry the onions for about four minutes and then add the mixture to the pan. While you do this, add the soy milk. If you wish, you could use a Soy Milk Maker to create your own. Next, add the pasta to the saucepan and mix well before moving everything into a dish. Sprinkle the breadcrumbs over the pasta and season with salt and pepper. Put the dish in the oven for 35 minutes and then it is done!
Vegetable Pasta Bake

For this dish you need one mug of dried pasta such as this Organic Penne, four large mushrooms chopped up, a large chopped onion, one chopped pepper, one sliced courgette, two cloves of sliced garlic, a tin of plum tomatoes, a pinch of herbs and then salt and pepper to season.
Boil the pasta and then drain and place in an oven proof dish when it is ready. Fry the chopped vegetables in olive oil until they are soft before adding the tomatoes and cooking for a few minutes to infuse the flavours. If you wish, you can add a little seasoning at this point. Once the mixture is ready, pour them into the dish and mix in with the pasta. Place your dish in the oven for 15 to 20 minutes and then it is ready to eat.
